Texas Caviar Recipe (Great Appetizer or Side Dish…and Healthy, Too!)

1 can black beans (drain & rinse)
1 can white shoepeg corn (drain & rinse) I have also used yellow corn in a pinch.
1 can black-eyed peas (drain & rinse)
1 can pinto beans (drain & rinse)
1 small jar pimentos (drain)
1 cup minced onion
1 cup finely chopped green pepper
1 cup finely chopped celery
3/4 cups sugar
1 cup red wine vinegar

1. Boil red wine vinegar and sugar.  When it begins to boil, remove from heat.

2. Stir all other ingredients together and pour red wine vinegar sauce over it. 

3. Refrigerate for at least 3 hours and serve with tortilla chips (Tostito Scoops work really well).

This recipe is SO good! I have made it many times over the past few years and this past weekend at a Christmas gathering, there wasn’t a bean left in the bowl when it was time to go.  I hope you like it as much as I do!

Get Crafty with the Kids During the Christmas Season – Make a Gingerbread House!

My 5-year-old came home from school one day recently talking about making a gingerbread house.  Evidently, another child in his kindergarten class had brought one for show-and-tell and he was intrigued to say the least. 

Personally, I had never made one before, but was determined to make one with him over the Christmas season.  I thought it might be a bit difficult, especially building the “structure” of the house. So, imagine how thrilled I was to run across gingerbread house kits made by “Wilton” while shopping at Walmart.  For only $9.00, it comes with the structure of the house already built, a couple types of candy, icing and the icing bag and tip. How easy can you get? 

Last night after dinner, he got to work decorating his gingerbread house and it was a lot of fun – notice it even has teddy grahams on the roof and a candy corn chimney?! If you are looking for things to entertain and occupy the kids over the Christmas season, this is a great little project to consider!

Christmas Countdown – Only 12 More Days (But, Don’t Stress)!

Twelve more days until Christmas, can you believe it? I am happy to say we have our Christmas tree up (minus all of the breakable ornaments this year that just don’t mix with a toddler) and the house is decorated.
