Harris Teeter “Sneak Peek” Deal for the Upcoming Sale Week (Starting 1/25)

I am working on next week’s Harris Teeter grocery deal list  (1/25 – 1/31) and just came across an awesome deal to share with you. This is a little “sneak peek” deal, as I will have the full deal’s list up later tonight.

Planter’s peanut butter will be on sale buy one, get one free ($1.84 each). Then, Click here to print a coupon for $1.50 off when you purchase two.  The coupon when paired with this sale will make each jar of peanut butter cost only $1.09 each when you purchase two.

Remember, you can print two coupons per computer. Since printable coupons can disappear at any time, be sure to print ASAP if you are interested in this deal.

Tasty Tuesday – Baked Mozzarella Chicken


  • 1 egg
  • 1 tablespoon milk
  • 1 cup seasoned dry bread crumbs
  • 1 tablespoon Italian seasoning
  • Boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • Marinara sauce (optional – see my recipe notes)


  1. Preheat oven to 375 degrees.
  2. In a small bowl, beat egg with milk. In another bowl, mix bread crumbs with Italian seasonings. Dip each piece of chicken into the egg/milk mixture, then into the bread crumb mixture to coat thoroughly.
  3. Place coated chicken in a 9×13 inch baking dish. Bake in the preheated oven for about 30 minutes, depending on how thick the chicken breasts are (bake until chicken is done and juices run clear). In the last 3 – 4 minutes of baking, sprinkle the chicken pieces with mozzarella cheese. Remove from oven and serve.

My Recipe Notes

I served the Mozzarella Chicken with a side of marinara sauce for dipping on each person’s plate. You could also just pour the sauce over each chicken breast. 

If you choose not to serve the chicken with marinara sauce, I would make sure that you have included plenty of seasoning with the bread crumbs (maybe a little more than it calls for), to give it plenty of flavor.

I also used a little more mozzarella cheese than what the recipe instructed.  I love mozzarella and wanted to make sure there was plenty melted on each piece of chicken.

Simplify Your Surroundings Series – Part 2 – Let the Reorganization Begin!

In case you missed it, last week I kicked off this series with my first post – Spruce Up Your Surroundings – What I Have Done in the New Year to Freshen Up My Nest.

In this new year, I am determined to end the year with less stuff than I started the year with in my home. 

If you walked into my house, you wouldn’t see a lot of outward clutter. Each year, I donate to Goodwill several times, I participate in a yard sale, sell on Ebay and pass stuff on to friends and family. But, as a family of five, we still have a way of accumulating things (based on the number of items I am coming across “hidden” in my closets, cabinets, garage and basement that we really just don’t need or use).

So, I am on a mission this year to rid my home of things that are basically taking up space. 

Here is a recap of what I discarded or reorganized over the past week:

Phone books! When glancing through one of my kitchen cabinets, I found nine phone books (two not pictured). Yes, NINE! We have only lived at our house for four years, but phone books are delivered to us from multiple sources.

We actually never even use a phone book since we can look up most anything on my computer. So, half of one kitchen cabinet is now freed up with space after recycling the phone books.

Next, I moved on to magazines.  Between me and my husband, we had three tall stacks that needed to be recycled from various areas of the house. I typically pass on the magazines I subscribe to family and friends, but these were all pretty dated and had been long overlooked. 

I realized over the holidays that my cooking utensils were in desperate need to reorganization.  Last week, I finally got to it. See “before” picture above (I know, it was a total mess).

Here is the “after” picture.  Yes, I still have a lot of utensils in there, but I definitely thinned out my collection.  Quite a few items were broken and no longer usable.  As for items that I just had too many duplicates, those went into my donation box.

Next task on the agenda was the food storage container cabinet (and, in many ways I can’t believe I am even posting this embarrasing “before” picture. But, on this blog, I am committed to keeping it real. I assure you that not all of my cabinets look like this. This is just a very extreme case ).

As you can probably guess, it had been a while since I had attempted to organize this cabinet.  The last time I did, my toddler destroyed my efforts the very next day and it made the time I spent on it seem wasted. I guess I gave up on this particular cabinet for a long time due to that. And since then, papers from the “junk drawer” located above this cabinet had fallen down to join the food containers. What a mess!

Here is the “after” picture of the cabinet (yay)!  I really thinned out the contents and many items went into the donation box.  Really, how many food storage containers and water bottles does one family need?

I also came across items that were cracked and no longer usable and these went into the trash.

I must admit, several times over the weekend, I had to open up this cabinet to remind myself once again just how great it looks now.

I love seeing progress being made around my house!  As I reorganize and get rid of items that I no longer need, I know that time will be saved and it will just feel better having things in order.

Simplify Your Sunday Morning – Easy Egg & Sausage Breakfast Casserole Recipe

I put this Egg & Sausage Breakfast Casserole together tonight, so I can pop it right in the oven tomorrow morning when I wake up. Here it is all ready to bake:

Egg & Sausage Casserole

6 slices of bread, cubed
1 lb. of crumbled, browned sausage (drained)
1 1/2 cups shredded cheddar cheese
8 eggs, beaten
2 cups of milk
1 tsp. salt
pepper to taste


Grease 9 X 13 dish

Layer bread

Sprinkle sausage & cheese

Mix eggs, milk, salt & pepper

Pour over mixture, cover & chill overnight

Bake at 325 deg for 45 minutes

Once cooked, this is a recipe in which the leftovers can be warmed in the microwave and still tastes as great as when it came out of the oven.

My Recipe Notes

— I normally use crumbled sausage, but since I was out of ground sausage, I chopped up two Johnsonville Apple Smoked sausage links instead.  As far as meat goes in this recipe, I think you could use bacon, ham, sausage, etc. and it would still taste great.

— This can be made the night before or the morning that you plan to bake it.  I have done it either way.
